Assaulting castles is generally a really bloody thing. It will be no different in this game. Don't assault the castle unless you really must.
Castles will be of the following levels: 1: (Keeps like Ivy Hall) 2: (Keeps like Acorn Hall) 3: (Keeps like the Crossing) 4: (Keeps like Winterfell) 5: (Keeps like Riverrun/Storm's End) 6: (Harrenhall and the Eyrie)
I won't go into extreme detail but it will be SIGNIFICANTLY harder to assault a level five castle than a level one. Level six denotes relative impossibility in assaulting successfully.
Besieging: This is the advised mode of warfare. Your enemies don't -really- want to die...talk to them and demand surrender or wait for them to run out of food. This will generally happen within several months if they aren't reinforced.

No...the smaller the keep and less imposing it is the harder it is to assault...

What's the policy on siege machinery? I mean if we're besieging a castle, can I construct Trebuchets and continually bombard them with fire and animal corpses until they surrender, or do I actually have to wait for them to starve to death?
I mean ideally I would just knock down the walls with trebuchets (I realize that would take a long time, but if I'm besieging for several months I feel like throwing large rocks at their walls over a period of several months would at least cause SOME structural damage) but if I can't do that can I just continually bombard them inside the castle?

Yes that's a possibility. Again it'd be harder to assault the gates of a level five fort than a level one one.

Would that have any effect on troop numbers inside the castle? Is there some privision that X number of men inside a besieged castles die every month, which would then increase if you're constantly bombarding htem?
